Since I'm going to be completely MIA from the blogging world today due to my all day meeting I decided to do an easy post. Not to mention with Thanksgiving just a few days away food is definitely on my brain! I got this idea from Lindsay when she made easy peanut butter cookies a few weeks ago I just decided to add my own twist to it!
These cookies turned out so delicious and creamy but the best part is they were extremely easy to make and went from the bowl to ready to eat in 20 minutes! They're an awesome treat if you're looking for something sweet to snack on or if you if you need a quick and easy item to bring to a party. Trust me, these don't get any easier... only 4 ingredients! Ok, let's get started.
Here's what you're going to need:
1 cup creamy peanut butter (I used Smucker's Natural Peanut Butter)
1 large egg
1/2 cup powdered sugar
1/2 cup granulated sugar
Optional: chocolate chips
Note: This is for a small batch of cookies, I made just over a dozen using the above ingredients. If you need more just double the ingredients
Step 1: Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
Step 2: Mix the peanut butter and the egg in a large mixing bowl. Slowly add in powdered sugar and granulated sugar until fully combined. The mixture will seem a bit dry but trust me, it turns out great!
Step 3: I scooped out the dough using a 1 tablespoon scoop and then rolled the scoops in about 1 1/2 in balls. Place the dough balls on the parchment paper
Step 4: Gently press down on the cookie ball with a fork to flatten out the cookie and give it that hatch pattern peanut butter cookies always have
Step 5: Bake at 350 degrees for 10-15 minutes. Cookies will seem a bit soft when you first take them out but the harden up just a little bit as they cool.
And just like that you're done! These cookies turned out so yummy and were so incredibly easy!

I have to try these your way with the half and half types of sugar! My only problem is that it's realllly hard not to eat them even before I bake them!!

I LOVE peanut butter cookies! Sadly I don't make them very often (aka ever) because my husband doesn't like peanut butter desserts of any kind! So crazy! I might need to make them for a holiday party though- that way I won't be tempted to eat the entire batch on my own!
