Happy Monday friends! I hope everyone had a fantastic weekend. Mine was a little up and down. If you follow me on Snapchat {pamelanicole84} you might have seen my lack of sleep and stomach issues this weekend which didn't make for the easiest weekend. I've been doing the Whole30 and the entire time I've felt great, no issues, and then on my final weekend my stomach issues started back up again. I don't know whether it's because I cheated a little this past week or if I managed to get a stomach but but either way, it ruined some of my weekend plans and left me with little to no sleep this weekend. But one thing I did manage to do this weekend was the Pro Bowl!

For those who don't know, the Pro Bowl is an NFL all-star game that happens every year where players from teams on the AFC and the NFC play each other. Previous the game has almost always been played in Hawaii but this year, for the first time, it was moved to Orlando so we got to partake in the festivities.

Before heading down to the Pro Bowl, we met up with Kerri for mimosas and some catching up. After not seeing each other for 3 weeks back in December/early January we made a plan to fit hanging out in whenever we can. After a couple of adult beverages, we headed down to the chaos that was the Pro Bowl. Unfortunately the weather wasn't the greatest, we had previously been having 80+ degree, sunny weather but a cold front moved through so it was cloudy, rainy and cold but we made the best of it. I'd be lying if I said I knew who won though... we definitely left in the 3rd quarter before the game was over. This girl turns into a pumpkin at midnight, sorry. #oldpersonstatus

Hoping everyone has a fantastic week! I'll be back to interviews this week so wish me luck!

*Linking up with Biana for Weekending*

Happy Monday friends! I don't know why but I am not quite ready to start the week. I didn't have a particularly late evening last night but I just feel like the weekends are not nearly long enough. I have a new employee starting this week which should take some of the pressure off me but I have a feeling this week might be a little busy until she gets trained in. Until then, linking up with Biana for my weekend recap.

Starting my weekend on Thursday because I headed to my first NHL game Thursday after work. We had club seats so we had a blast eating and drinking all the things and the Lightning won!

Friday I worked a long day from home and ended up just making dinner at home before calling it a night.

Saturday we were up bright and early for our final UCF home game of the season. We have one more game left but next weekend we can't go so it was fitting my last UCF home game was my first time watching UCF play Cincinnati (my home town).

Sunday after some errands, we met up with Kerri for our annual corn maze in Mt. Dora. After we found our way out (in about 30 mins, yeah, we're awesome like that!) we headed to downtown Mt. Dora for some drinks. I have to admit, I love Mt. Dora! It's such a cute little city!

Hope everyone has a fantastic week!

Happy Monday lovelies! I hope everyone had a wonderful weekend! I really wish I could have taken advantage of daylight savings time and actually gotten an extra hour of sleep yesterday but unfortunately I wasn't so lucky. I guess I shouldn't complain, getting up early on the weekends allows me to get a ton of stuff done in the morning which frees up my days to relax and actually enjoy the weekend. Speaking of, let's jump into my weekend recap with my girl, Biana!

If you follow me on Instagram or Snapchat {pamelanicole84}, you probably saw that I spent my Friday at EDC in Orlando! It was such a fun, crazy experience. Not really my "scene" but I am so happy I got to experience it. I'll get into more detail about EDC later this week for those of you who might not be familiar but until then, here are a few pics.

Saturday I did some early morning retail therapy before heading out to tailgate for the UCF game.

We played Tulane and despite the score, it was a rough game. We ended up winning 37-6 but the majority of our touchdowns came from our defense. Our offense definitely has some work to do before we take on Cincinnati next weekend.

Sunday was for relaxing. It was a cloudy but cooler day so we took advantage of the slightly (and I do mean slightly) cooler weather. Is anyone else not really getting much fall?? I also made barbacoa tacos with homemade tortillas and fresh cilantro an I must say, I don't think I'll ever buy tortillas again. SO good and easy! Now I just need a tortilla press...

Have a fabulous week babes! I'm REALLY hoping my week won't be as crazy as last week so I can actually respond and comment back! Not to mention I'd love to not be so busy I forget to eat lunch :)

Happy happy Monday friends! Since Matthew rolled through last weekend we have been experiencing some slightly lower highs and definitely lower lows and I have been loving every minute of it. It's so nice waking up and not having it already be almost 80 degrees out. Granted it's still getting to the mid-80's during the day, it's nice to have those few hours in the morning and evening of upper 60's. And of course I definitely took full advantage this weekend! Linking up with Biana for my weekend recap!

Friday was my work from home day so I enjoyed working from my patio in the morning before it warmed up.  After work we ran out and did a quick happy hour with Kerri to enjoy a bit more time outdoors.

Saturday I was up bright and early to head to my CycleBar class that I missed the previous weekend thanks to Hurricane Matthew. I have to admit, I've been doing spinning for years and these CycleBar classes really get me. I think seeing how I'm doing compared to other people in the class really pushes me harder... darn my competitive side!

After getting cleaned up from my workout it was time to get ready for the UCF tailgate. It was an evening game against Temple so the weather was perfect and I always love getting to watch my boys under the lights even though it was a heartbreaking loss in the last 30 seconds.

Sunday was relax day. After running some errands I parked it on my couch for football and food. I decided to try out a few more DIY projects while watching football to keep me entertained while my poor Bengals got destroyed by the Patriots.

Hope everyone has a fabulous week!

Happy Monday friends! Tell me Monday's wouldn't be better if they started out with sprinkles? I think that should definitely be a thing! Not exactly how sprinkles with my coffee would taste but I'm willing to give it a shot. I currently have a fairly slow week so I'm pretty excited to get caught up on things, maybe do some closet cleaning, who knows? But for now, linking up with Biana for my weekend recap.

Friday I headed home after work to relax and prep for the UCF game Saturday. Since we didn't really get to tailgate for our first game, we planned on doing a bit more this time. I found a dip recipe I really wanted to try out so a trip to the grocery store was necessary.

If you guys follow me on Twitter or Snapchat {pamelanicole84} you probably heard about my USPS/Karen Walker sunglasses debacle. Well they finally mysteriously showed up Sat morning and not by USPS! Long story short, they finally arrived an I'm still trying to figure out whether I like them or not. They're supposed to be oversized so they are supposed to be pretty large but I'm so used to wearing my Ray-Bans that this is a super weird switch up for me. What do you guys think? Too big or cute?

Mid afternoon we headed down to the UCF campus and claimed our spot for some food, beers and of course games. Unfortunately we lost in double overtime but the game was much more competitive than I thought it would be so I was happy about that AND we played with a true freshman QB so I can't be that upset about losing... right?

Sunday was birthday celebration day (no, not mine!) so after breakfast and chores we headed down to the touristy side of town for brunch and football at Brickhouse Tavern. After a few mimosas there we headed over to Tin Roof for some more cocktails and of course more football  before ending the night at City Walk.

Who else wishes they were still in bed right now? Please don't tell me I'm the only one! Even though this weekend was far more relaxed than last weekend I am struggling without having that extra day off. It probably doesn't help that I went to the gym this weekend for the first time in like 2 weeks so I'm super sore this morning. Ok, enough whining! Let's jump into my weekend recap (the one with all the food) with Biana and get this week started.

Ok, technically I'm starting out this post with a picture from last Tuesday at my conference but I had to share my picture with Captain Morgan. The guy was hilarious and fun and I think I should totally be a pirate. Maybe in a future life?

Ok moving on. Friday was my first work from home day. My "new work schedule" allows me to work from home two days a month to get caught up on everything completely uninterrupted and it allows me to not have to drive the hour in and home. I got SO Much done on Friday. It was amazing. I even manage to meet up with some former coworkers for lunch and pick their brain about a few people they used to work with that applied to my new coordinator position.

Friday night we tried out a new pizza place with NY style pizza and it was SO good. I will definitely be ordering from them again soon.

Saturday I was up bright and early, headed to the gym and then ran a few errands before the UCF game at noon. I made brunch and had mimosas for the game. Unfortunately Michigan crushed us but I'm glad we managed to at least score and we got paid a ton to go there so that definitely softened the blow of losing.

The rest of the day Saturday was spent eating and watching more football.

Sunday I got all my errands out of the way early so I could have the rest of the day to relax and watch yup, you guessed it. More football! We headed down to a local bar for the first round of games to watch my Bengals barely beat the Jets and unfortunately watch the Jags lose to Green Bay.

After the 1 pm games we headed home, made dinner and relaxed for the rest of the evening.

Hope everyone has a fantastic week!

Aren't weeks so much better when they start on a Tuesday instead of a Monday? I never mind working on a Friday but there's just something so dreaded about a Monday so I never mind skipping straight over it and going to Tuesday. Unfortunately, we have a company meeting all day today (and I mean ALL day, it starts at 9 am and ends at 7 pm) so I'll be completely MIA from blogland but I'm linking up with Biana anyway to share my weekend recap since it was a busy/fun one!

Friday was an early day for me since I was on social media duty for the weekend (which basically means I'm on call for anything that pops up on social over the weekend). I was supposed to head straight to Tampa after work for the Summer of Rum Festival but right as I was headed out we found out it was canceled due to Hurricane Hermine and the winds so instead I headed out with Kerri and the boys for an impromptu happy hour.

Saturday was the first UCF game of the season so we headed down to tailgate for a bit before heading in to watch the game. My parents also came into town Saturday for a quick birthday weekend trip for my mom. They were due to come in earlier but after a full day of delays they didn't make it in until Saturday evening.

Sunday the weather was better so we decided to head over to Epcot for some birthday fun for my mom. My parents hadn't been to Disney in like 20-something years so it was fun to get to experience that with them even if my dad was more than skeptical about being there.

Monday was by far my most relaxed day. We started out the day a little later (which was nice) before my mom and I headed out to try to get pedis. Unfortunately every place was closed so we ended up doing some shopping at Target and running to lunch at my parents favorite Mexican restaurant in town. It was rainy so after lunch we headed home and binge watched Z Nation before heading to bed.

Hope everyone has a fantastic week!
